Stuffed Bell Peppers
Ingredients: Bell peppers, quinoa or rice, black beans, corn, diced tomatoes, onion, cheese (optional), cumin, chili powder, salt, and pepper.
Instructions:
1. Cook quinoa or rice as per package instructions.
2. Mix cooked grains with black beans, corn, diced tomatoes, chopped onion, and spices.
3. Cut tops off bell peppers and remove seeds.
4. Stuff with the mixture.
5. Bake at 375°F (190°C) for about 30 minutes.
6. Top with cheese if desired.
